Cookie Dough Ice Cream Sandwiches

These are yummy chocolate chip cookie dough ice cream sandwiches I made for my coworker's birthday! I was planning on making an ice cream cake (like usual), but came across the delicious recipe from Mel's Kitchen Cafe and decided to make it instead.

The ice cream sandwiches were a big hit because cookie dough is delicious and so is ice cream. If you decide to make these I have one suggestion: Use mini sized chips like the recipe calls for so you can press the dough into a thinner sheet. I used regular sized chips and the dough can only be pressed as thin as the chips so my dough was a bit thick (not that it was bad, it will just go further if it were thinner).
