Rhubarb Compote

I made some delicious Rhubarb Compote from the recipe in Fika: The art of Swedish Coffee Break by Anna Brones & Johanna Kindvall for my Craft Book Club project this month! It was an incredibly simple recipe; using just rhubarb, sugar, and some mint leaves. I had no idea that rhubarb and mint paired so well. So far I've had it by itself, on ice cream, and in my morning oats. The little batch I made is almost gone and I've got lots of rhubarb growing in my garden so I'll need to make up another batch soon.
