Apricot and Spice Princess Cake

February's Craft Book Club read was Cinderella is Dead by Kalynn Bayron! I am definitely a fan of any book where the 'princess' saves the day and this Cinderella story was fantastic! Continuing with my cooking or baking something for my Craft Book Club projects, I decided to make a Swedish princess cake with a twist. Since Cinderella takes place in France and the book has a mysterious twist from the original story, I decided to change up the flavors of my princess cake. I picked apricot jam and spice cake which is a winning combination! The rest of the princess cake is pretty standard; there is a bit of custard/pudding between the cake layers, whipped cream frosting the cake and mounded on top, and a thin layer of marzipan on top. I think the orange of the marzipan is the perfect shade! Then the cake was decorated with some dried apricots! It looks pretty good and tastes even better.

Our March read is Donuts and Other Proclamations of Love by Jared Reck. It's a funny and emotional young adult book about "food trucks, festivals, and first loves." I'm ready to make something yummy!
