Dandelion "Honey"

I finally got around to making dandelion syrup!

I came across this recipe for Vegan Honey on Fashion Flavors via Foodgawker and decided that I needed to make this dandelion "honey". It was time consuming to make and I did get impatient at the end so my syrup isn't very thick. The "honey" tastes mostly sweet with some floral brown notes; I am not sure how to describe it.

So far I have had it on Greek yogurt and in oatmeal with some peanut butter. It tastes pretty good and I think I may make a cake or dessert of some sort to use it up before it goes bad. I don't think it will last very long, it will probably start to mold in the next week or so especially since I didn't let it thicken very much.

I collected dandelion petals (petals only, if you don't work with them right away dandelion heads will close) then simmered them in water with part of an apple for an hour. Next I removed the petals and apple and added the sugar and let it cook for another half hour (half an hour was not long enough to make the syrup thick). After I was tired of waiting I poured it into some jars and put them into my refrigerator after eating a spoonful.
