I have a lot of zucchini and was looking for some interesting recipes to use it up because I don't want to make anymore zucchini bread. While perusing Foodgawker I saw a recipe for Zucchini Hummus from Lindsay at My Own Ideas; it looked interesting so I made some.
This is actually roasted red pepper zucchini hummus that was made with oldish zucchini that was pretty soft/squishy (in turn making the hummus fairly wet). I ate it with chips, but I think it would be better as a sandwich spread. Zucchini pizzas are another good way to eat zucchini if you are looking for recipes too.
In other gardening news: I stopped watering my garden about a week ago, after a few major rain storms. The pumpkin leaves and vines shriveled up (could also be from the fungus) leaving me with five more lovely pie pumpkins ready to pick.
I also picked nearly the last of my zucchini (there is a little one left on the vine) and they are gigantic. My pumpkins look miniature next to them! I've been shredding and freezing some zucchini in preparation for a few months in the future where I will say, "zucchini bread sounds so good right now," and I won't mind making up a few loafs.
