Last spring I made dandelion "honey"; I liked it so much I had to try again with an autumn flower. I was hoping my recently planted lavender would be mature enough to harvest, but it has at least one more growing season so I purchased some edible lavender buds and made some fall floral syrup. It is very aromatic and flavorful. So far I have only had it on my morning oatmeal (with some lemon), but it would be excellent on ice cream or in a mixed drink or maybe even over a lemon sponge cake.
